Brian was born in Moosomin Saskatchewan and completed his culinary training at Saskatchewan Technical School in 2005. Brian started his career in Saskatoon and completed his apprenticeship there. The call of Calgary came to Brian and he moved here in 2006 and landed at Vintage Chophouse where he left, after two years of service as their Sous Chef. Brian then found himself in Australia for a couple of years working his way around the east coast of Australia. He returned to Calgary, at Il Sogno as their Sous Chef for the past two years. In February of 2013, Brian found his opportunity to grab the reigns of Il Sogno’s culinary brigade and assumed the role of Executive Chef.
Philosophy:
Brian’s personal philosophy of food and cooking is simple; “make it fun and simple. The flavours should be simple yet elegant and the plates should have a light hearted feeling to them to compliment the simple flavours.” Brian’s love of the Italian influence that Il Sogno is known for allows for his personal philosophy to shine bright.
